Ingredients

  • 1/2 c. boiling water
  • 1/2 c. yellow cornmeal
  • 1/2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1/2 c. milk
  • 1/4 c. butter or margarine, melted

Directions

    In a medium bowl, pour boiling water over cornmeal; cool.

    In a medium bowl, combine flour, baking powder, chili powder, cumin and salt.

    Mix egg, milk and butter with cornmeal mixture; stir into flour mixture until blended.

    Mixture will be runny.

    On a heated griddle or skillet sprayed with non-stick cooking spray, drop mixture by tablespoonfuls.

    Cook over medium heat until bottom is crispy brown and top looks dry; turn and brown other side.

    Makes about 3 dozen.
