Ingredients
- 1/2 c. boiling water
- 1/2 c. yellow cornmeal
- 1/2 c. flour
- 2 tsp. baking powder
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1 egg, beaten
- 1/2 c. milk
- 1/4 c. butter or margarine, melted
Directions

1In a medium bowl, pour boiling water over cornmeal; cool.

2In a medium bowl, combine flour, baking powder, chili powder, cumin and salt.

3Mix egg, milk and butter with cornmeal mixture; stir into flour mixture until blended.

4Mixture will be runny.

5On a heated griddle or skillet sprayed with non-stick cooking spray, drop mixture by tablespoonfuls.

6Cook over medium heat until bottom is crispy brown and top looks dry; turn and brown other side.

7Makes about 3 dozen.
