  • 2 tablespoon light olive oil
  • 1 onion, finely chopped or grated
  • 2 cloves garlic, crushed
  • 1 kg trim beef mince
  • 1 tablespoon flour
  • 1 carrot, peeled, grated Target 2 lb For $3.00 thru 02/06
  • 1 zucchini, grated
  • 2 cups water
  • 1 cup frozen peas
  • 3/4 cup salt reduced tomato paste
  • 1 1/2 tablespoons VEGEMITE
  • 2 teaspoons dried mixed herbs
  • pepper, to taste
  • Potato Topping
  • 600g sweet potatoes, thinly sliced
  • 1 tablespoon light olive oil
  • 1/4 cup KRAFT* 33% Less Fat Grated Parmesan Cheese Blend Blend

Directions

    Heat oil in a large frying pan over medium heat.

    Add onion and garlic, cook until softened.

    Add mince, cook over high heat until well browned and cooked through.

    Stir in flour, carrot, zucchini, water, peas, tomato paste, Vegemite*, herbs and pepper.

    Simmer for 15 minutes.

    Place meat into a 20cm x 30cm shallow baking dish.

    Layer potatoes evenly over the meat, drizzle with oil, and sprinkle with parmesan.

    Bake in a moderate oven 180 degrees C for 30 minutes until golden.

    Serve with mixed green salad.
