- 1 packages smelt fish
- 1/2 cup all-purpose flour
- 1 tsp sea salt
- 1/2 tsp smoked sweet paprika
Directions

1Pour enough oil to cover a frying pan and heat on medium high.

2Combine flour, salt, and paprika in a bowl.

3Dredge smelts in the flour/spice mixture.

4When the oil is hot add the dredged smelts and cook until golden brown.

5Set cooked smelts onto a paper towel to absorb some of the oil.

6Serve right away.

7Squeeze lemon onto cooked fish.

8The heads can be cut off before frying.
