- 2 chicken breasts halved lengthwise
- 1 egg
- 12 saltines finely crushed
- 1 cup salsa
- 1 cup cheese Mexican-style finely-shredded four, blend
- 2 tablespoons butter melted
Directions

1Preheat oven to 425 degrees.

2Dip chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece. Pressing coating into chicken.

3Place in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.

4Bake 20 min. or until chicken is done (internal temperature should be 165°F). Top with salsa and cheese; bake 5 min. or until cheese is melted.

5Found this on Kraft foods and tweaked it to make it more Mexican-y. Easy to prep and cook....your kids will love it too! You can substitute 1 cup crushed tortilla chips for the crackers or pepper-jack cheese for the 4-cheese blend.
