  • 2 lb. shrimp, finely chopped
  • 4 oz. water chestnuts, minced
  • 2 green onions, minced
  • 1 piece ginger, minced
  • salt and pepper to taste
  • 5 egg whites
  • 1/2 tsp. yeast
  • 1 Tbsp. flour or cornstarch
  • 1/2 loaf bread, finely diced
  • salad oil for deep frying

Directions

    Combine shrimp with water chestnuts, green onions, ginger, salt, pepper, egg whites, yeast and flour in bowl; mix well. Shape into 1 1/2-inch balls.

    Coat with bread crumbs.

    Heat oil to 400° in wok.

    Deep fry shrimp balls in hot oil until golden brown and crispy.
