- 3 tablespoons butter
- 2 tablespoons flour
- 3/4 cup milk
- 8 slices bread lightly toasted
- 2 tablespoons dijon mustard
- 5 ounces sliced ham
- 1/2 cup cheddar cheese grated
- 4 eggs
- salad to serve
Directions

1Preheat the oven to 400°F.

2For the bechamel sauce, melt butter in small saucepan on medium heat. Stir in flour, cook for 1 min. Remove from heat. Stir in milk. Return to heat. Cook, stirring, until sauce boils and thickens. Season to taste.

3Place 4 bread slices on baking pan. Spread evenly with mustard. Top with ham. Spread half the bechamel sauce evenly over the ham. Cover with the remaining bread slices. Top with remaining sauce. Sprinkle with cheese.

4Bake for 12-15 mins, until golden.

5Meanwhile, heat a lightly greased nonstick skillet on medium heat. Fry eggs for 2-3 mins, until set.

6Top each sandwich with an egg. Serve with salad.
