Crowned Carrot Cake

Ingredients

• 1 Tbsp. shortening
• 3/4 c. chopped nuts
• 1 1/2 c. firmly packed brown sugar
• 3/4 c. vegetable oil
• 4 eggs
• 1 1/2 c. all-purpose flour
• 1 c. Ground Oat Flour (see individual recipe)
• 1 Tbsp. baking powder
• 1 tsp. salt
• 1 tsp. allspice
• 1 tsp. cinnamon
• 3 c. shredded carrots
• 1 c. walnuts or 3/4 c. raisins
