  • 1/2 c. skim milk
  • 4 slices bread, made into fresh bread crumbs (use food processor)
  • 2/3 c. grated Parmesan cheese
  • 1 Tbsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. pepper
  • 1 chicken (3 to 4 lb.), cut up and skin removed

    Heat oven to 350°.

    Coat a 13 x 9-inch pan with vegetable cooking spray.

    Put milk in a shallow dish.

    Mix remaining ingredients except chicken in a medium size bowl.

    Dip each piece of chicken in milk, then in crumbs, pressing so crumbs adhere to form a thick, even coating.

    Arrange meaty sides up in a single layer in prepared pan.
