Ingredients

  • 180g Butter
  • 30ml Golden Syrup
  • 5ml Bicarbonate of Soda
  • 125g Plain Flour
  • 180g Oatmeal
  • 250g Sugar
  • 80g Desicated Coconut
  • Optional: Add up to 250g chopped nuts to the dry ingredients

Directions

    Heat butter & syrup to boiling point

    Add bicarb of soda
  3. 3
    Sieve flour, mix in oatmeal, sugar & coconut
  4. 4
    Add butter syrup mix and mix well
  5. 5
    press evenly into lightly greased swiss roll tin (38cm x 25cm)

    Bake at 180*C for 15-20 min until golden brown on top.

    Allow to cool for 3 minutes

    Cut into squares while in tray
  9. 9
    After 10 minutes, remove & allow to cool on wire rack
