- 1 lb. fish fillets
- 2 Tbsp. lemon juice
- 1/2 c. water
- 1 c. cracker crumbs
- 1 tsp. salt
- 1 tsp. grated lemon peel
- 1 tsp. dried dill weed
- 1/4 tsp. pepper
- 1 egg, beaten
- oil for frying
Directions

1Soak fish fillets in lemon juice and water.

2In a large plastic bag, combine cracker crumbs with salt, lemon peel, dill and pepper.

3Drain fish and pat dry.

4Dip in beaten egg and then in cracker crumb mixture.

5Fry in 1/4 to 1/2-inch hot oil for 3 to 4 minutes on each side.
