- 50 g shelled walnuts, coarsely chopped
- 50 g banana chips, coarsely chopped
- 120 g rolled oats
- 80 g butter
- 40 g sugar
- 2 None medium eggs
- 1/2 tsp vanilla extract
- 50 g flour
- 1 tsp baking powder
Directions

1Preheat oven at 350°F.

2First, melt the butter in a non-stick pan, then add the walnuts, banana chips, rolled oats and the sugar and stir for about 3 minutes until everything is thoroughly coated and slightly caramelized. Spoon the mixture on to a plate and allow to cool.

3Beat the eggs in a large bowl with the vanilla extract, then sift in the flour and the baking powder. Next, tip in the caramelized oatmeal and mix well. Line a baking tray with baking parchment, then spoon on the mixture, making teaspoon-sized individual cookies. Bake in oven for about 10 mins. Remove from the oven and allow to cool on a wire rack, then serve.
