Crusted Cashew Chicken

  • 6 boneless chicken breasts
  • Cashews, finely chopped
  • Brown mustard (any brown deli will work)
  • 1 jar apricot jam
  • Curry to taste

Directions

    In a pan, heat apricot jam then add curry and mustard to taste. Coat the chicken breasts in the jam sauce then roll in your finely chopped cashews then place in a lightly greased 9 x 13-inch baking dish. Bake at 350°F for approximately 45 minutes. Serve with leftover sauce, steamed asparagus and wild rice.
