- 6 boneless chicken breasts
- Cashews, finely chopped
- Brown mustard (any brown deli will work)
- 1 jar apricot jam
- Curry to taste

1In a pan, heat apricot jam then add curry and mustard to taste. Coat the chicken breasts in the jam sauce then roll in your finely chopped cashews then place in a lightly greased 9 x 13-inch baking dish. Bake at 350°F for approximately 45 minutes. Serve with leftover sauce, steamed asparagus and wild rice.
