Crusted Lamb Chops

- 12 lamb chops French trimmed
- 8 ounces tomatoes on the vine cherry
- olive oil
- green beans Steamed, to serve
- 1/2 cup fresh breadcrumbs
- 1/2 cup green olives chopped
- 1/2 cup chopped parsley coarsely
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
Directions

1Preheat the oven to 400°F. Brush lamb and tomatoes with olive oil. Season to taste. Arrange on foil-lined baking pan.

2For the crust, pulse breadcrumbs, olives, parsley, Parmesan cheese and oil in a food processor until mixture is well chopped. Press crust mixture on top of lamb chops.

3Bake for 10-15 mins, until lamb is cooked to desired doneness and crust is golden. Serve with roasted tomatoes and green beans.
