- 1 tablespoon olive oil
- 1 onion, chopped
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 5 eggs, beaten
- 1 cup swiss cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 cup monterey jack cheese, shredded
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup table cream
Directions

1Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.

2Heat oil in a large skillet over medium-high heat.

3Add onions and cook, stirring occasionally, until onions are soft.

4Stir in spinach and continue cooking until excess moisture has evaporated.

5In a large bowl, combine eggs, table cream, cheese, salt and pepper.

6Add spinach mixture and stir to blend.

7Bake in preheated oven until eggs have set, about 30 minutes.

8Let cool for 10 minutes before serving.
