Crustless Zucchini Quiche

- 1 tsp. butter
- 2 c. sliced zucchini
- 1 small onion, chopped
- 2 tsp. butter
- 15 oz. part skim milk Ricotta cheese
- 1/2 c. grated Cheddar cheese
- 1/2 c. skim milk
- 3 eggs, beaten
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Directions

1Preheat oven to 350°.

2Grease 9-inch quiche pan with 1 teaspoon butter. Steam zucchini until very soft (about 10 minutes).

3Saute onion in 2 teaspoons butter until transparent. When cool, mix with Ricotta cheese, Cheddar cheese, milk, eggs, salt and pepper.

4Fold in zucchini and pour into quiche pan.

5Bake for about one hour, or until quiche is golden and firm to the touch.

6Yields six servings.
