  • 300 ml soda cracker crumbs, rolled finely
  • 125 ml margarine, melted
  • 15 ml onion, finely chopped
  • 50 ml green pepper, finely chopped
  • 30 ml margarine
  • 30 ml flour
  • 2 ml salt
  • 5 ml sugar
  • 250 ml milk
  • 1 (16 oz.) can whole kernel corn (liquid included)
  • 2 eggs

Directions

    Preheat oven to 200°C.

    Combine crumbs and melted margarine. Save 125 ml crumb-margarine mixture for topping.

    Press crumbs evenly on sides and bottom of pie pan.

    Saute onion and green pepper in margarine.

    Blend in flour, salt and sugar.

    Slowly add milk; cook and stir until thickened.

    Mix in corn and eggs.

    Stir well.

    Pour corn mixture into crumb crust.

    Top with remaining crumbs.

    Bake 30 minutes or until a knife inserted (off center) comes out clean.
