Cuban Black Beans And Rice Recipe

Ingredients

  • 2 c. dry black beans
  • 2 tbsp. oil
  • 3 tbsp. butter
  • 1 minced onion
  • 2 cloves garlic, minced
  • 1 c. rice
  • 6 c. water
  • Healthy pinch of salt and pepper

Directions

    Put beans in pressure cooker with 4 c. water and oil.

    Close and cook till control jiggles.

    Remove from heat, cold naturally, drain beans and set aside.

    Cook onion in butter till translucent/soft, add in garlic and rice.

    Stir and cook for 5 min.

    Add in 2 c. water and beans.

    Cover and cook on high till control jiggles, then lower heat and cook five min.

    Remove from heat, let sit 5 min, then run under cool water.

    Season to taste.
