Cuban Black Beans And Rice Recipe

Ingredients
- 2 c. dry black beans
- 2 tbsp. oil
- 3 tbsp. butter
- 1 minced onion
- 2 cloves garlic, minced
- 1 c. rice
- 6 c. water
- Healthy pinch of salt and pepper
Directions

1Put beans in pressure cooker with 4 c. water and oil.

2Close and cook till control jiggles.

3Remove from heat, cold naturally, drain beans and set aside.

4Cook onion in butter till translucent/soft, add in garlic and rice.

5Stir and cook for 5 min.

6Add in 2 c. water and beans.
-
7Cover and cook on high till control jiggles, then lower heat and cook five min.

8Remove from heat, let sit 5 min, then run under cool water.

9Season to taste.

10Serves 4.
