Cuban Enchilada Crab

Ingredients

  • 1/2 c. vegetable oil
  • 2 lb. crab meat
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 4 cloves garlic, minced (4 tsp.)
  • 1 (2 oz.) jar pimientos, minced
  • 1/4 c. chopped fresh parsley or cilantro
  • 1/4 c. ketchup
  • 1 tsp. Tabasco sauce or more to taste
  • 1/2 c. dry white wine
  • 1 tsp. vinegar
  • 1 1/2 tsp. salt
  • 1 bay leaf

Directions

    In a deep-sided pot, heat oil over medium heat.

    Add crab meat and fry 5 minutes.

    Add onion, bell pepper and garlic.

    Cook another 5 minutes.

    Add pimientos, parsley, ketchup, Tabasco sauce, wine, vinegar, salt and bay leaf.

    Reduce heat to low and cook 5 minutes or until sauce is thickened.

    Remove bay leaf.
