Cuban Fried Rice

Ingredients
- 2 c. (uncooked) rice
- 1 lb. sliced baked ham, chopped
- 3 stalks scallions, chopped
- 4 eggs
- 1 can bean sprouts
- 1 small can sliced water chestnuts
- 1 can baby shrimp or 1/2 lb. shrimp, cooked, cleaned and peeled
- chunks of pork and beef (optional)
- soy sauce
- garlic powder
Directions

1Cook rice as directed but use olive oil instead of vegetable oil and omit the salt.

2When rice is done, sprinkle soy sauce and toss until rice is brown (lite).

3Drain bean sprouts well; add to rice.

4Add chopped sliced ham, shrimp, (pork), garlic powder and water chestnuts.

5Scramble eggs and fry in butter; add to rice. Top rice with raw scallions.

6Mix and serve.
