Cucumber Delight

Ingredients

  • 1 c. cider vinegar
  • 1 c. water
  • 1/2 c. sugar
  • 1 1/2 Tbsp. salt
  • enough cucumber slices to fill qt. jar
  • 1 small onion, thinly sliced
  • 1 clove garlic, chopped

Directions

    Combine vinegar, water, salt and sugar.

    Bring to a boil and stir until sugar and salt dissolve.

    Set aside to cool.

    Wash, peel and slice cucumbers into rather thick pieces.
  5. 5
    (Sometimes I don't peel my cucumbers and they are just as good.)

    Place onion and garlic in a clean quart jar.

    Add cucumber slices, filling to the top.

    Fill jar with the vinegar mixture.

    Put top in place. Refrigerate pickles for three days before serving.

    Makes 1 quart.
