Cucumber Mousse

Ingredients

  • 2 tsp. gelatin
  • 3 Tbsp. cold water
  • 2 tsp. vinegar or water
  • 1 tsp. grated onion
  • 3/4 tsp. salt
  • 1/4 tsp. paprika
  • 1 c. pared, seeded, chopped cucumbers
  • 1/2 c. (before whipping) whipped cream

Directions

    Dissolve gelatin in cold water.

    Put over heat and add vinegar, onion, salt and paprika.

    Chill until about to set.

    Beat the gelatin mixture into the stiffly whipped cream.

    Fold in the cucumbers.

    Rinse individual molds, fill them with mousse.

    When they are thoroughly chilled, invert them onto a garnished plate. Serves 4.
