Cucumber Soup

  • 1 can chicken broth
  • 4 peeled and seeded large diced cucumbers
  • 12 to 15 diced scallions, tops included
  • 3/4 c. heavy cream
  • salt and pepper to taste

Directions

    Boil broth.

    Add cucumbers and onions.

    Simmer 10 minutes. Puree in blender with cream.

    Chill well.

    Season prior to serving.

    Sour cream or dill garnish may be added.

    This soup is better if made a day ahead.
