Cumin Avocado Rice

  • 1 c. regular long grain rice
  • 1 Tbsp. butter
  • 2 chicken bouillon cubes
  • 3/4 tsp. ground cumin
  • salt to taste
  • 1 ripe avocado
  • 1/3 to 1/2 c. picante sauce
  • 2 green onions with tops

Directions

    Cook rice according to directions, adding butter, bouillon cubes and cumin, but omitting salt.

    Peel, seed and coarsely chop avocado.

    Stir in rice with picante sauce and green onions.

    Serve cold with additional picante sauce.
