  • 4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat discarded
  • 1 medium lime, halved, divided use
  • 1 teaspoon ground cumin
  • 1/2 medium green bell pepper, finely chopped, or 1/2 cup finely chopped poblano pepper
  • 1/4 large onion, finely chopped
  • 1 small tomato, chopped
  • 2 tablespoons snipped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 cup fat-free sour cream

    Lightly spray an 11 x 7 x 2-inch baking pan with cooking spray.

    Place the chicken in a single layer in the pan.

    Squeeze the juice of 1/2 lime over the chicken.

    Top with the bell pepper and onion.
