  • 2 cans beef consomme (not broth)
  • 1 tsp. ground cumin
  • 1 Tbsp. butter or margarine
  • 1 c. onion, chopped
  • 1 c. celery, chopped
  • 1/4 to 1/2 c. green pepper, chopped (optional)
  • 1 c. long-grained raw white rice
  • 2 Tbsp. Worcestershire sauce
  • 1/2 tsp. salt or to taste

Directions

    Bring consomme to boil; add cumin.

    In skillet saute vegetables in butter until soft.

    Add rice and saute until golden brown.

    Put in a large casserole.

    Pour boiling liquid over rice. Cover and bake 25 minutes at 350°.

    Stir and check for doneness of rice.
