- 1 c. uncooked rice
- 1/3 c. chopped onion
- 1/4 c. chopped green pepper
- 2 Tbsp. bacon fat
- 2 cans condensed consomme or bouillon, boiling hot
- 3/4 tsp. salt
- 3/4 tsp. cumin seed
Directions

1Heat rice, onion and pepper in bacon fat until golden brown. Combine in 2-quart casserole with remaining ingredients.

2Cover tightly.

3Bake in moderate oven (350°) about 30 minutes or until rice is tender.
