  • 1 c. uncooked rice
  • 1/3 c. chopped onion
  • 1/4 c. chopped green pepper
  • 2 Tbsp. bacon fat
  • 2 cans condensed consomme or bouillon, boiling hot
  • 3/4 tsp. salt
  • 3/4 tsp. cumin seed

Directions

    Heat rice, onion and pepper in bacon fat until golden brown. Combine in 2-quart casserole with remaining ingredients.

    Cover tightly.

    Bake in moderate oven (350°) about 30 minutes or until rice is tender.
