Cupcake Banana Bread

  • 2 eggs
  • 2/3 c. margarine
  • 1 1/2 c. sugar
  • 1 1/2 c. flour (plain)
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 4 Tbsp. milk
  • 1 c. mashed, very ripe bananas
  • 3/4 c. chopped pecans
  • 1 tsp. vanilla

Directions

    Let margarine and eggs come to room temperature before creaming them with sugar.

    Mix flour, baking powder and salt and add to creamed mixture, alternating with milk.

    Add mashed bananas, nuts and vanilla, then pour into a greased muffin tin. Can be made into a loaf using greased 8 x 13-inch loaf pan.

    Bake 25 minutes at 350°.

    Bake 45 minutes for loaf.

    Makes about 2 dozen cupcakes.
