- 2 eggs
- 2/3 c. margarine
- 1 1/2 c. sugar
- 1 1/2 c. flour (plain)
- 2 tsp. baking powder
- 1/4 tsp. salt
- 4 Tbsp. milk
- 1 c. mashed, very ripe bananas
- 3/4 c. chopped pecans
- 1 tsp. vanilla
Directions

1Let margarine and eggs come to room temperature before creaming them with sugar.

2Mix flour, baking powder and salt and add to creamed mixture, alternating with milk.

3Add mashed bananas, nuts and vanilla, then pour into a greased muffin tin. Can be made into a loaf using greased 8 x 13-inch loaf pan.

4Bake 25 minutes at 350°.

5Bake 45 minutes for loaf.

6Makes about 2 dozen cupcakes.
