- 7 3/4 tablespoons butter softened
- 15/16 cup caster sugar
- 7/8 cup plain flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 medium eggs
- 1 teaspoon vanilla extract
Directions

1Preheat the oven to 180C/ 350F / Gas 4. Line a muffin tin with paper cases.

2Put the butter and sugar in a bowl and beat until pale and fluffy.

3Sift the flour, baking powder and salt into the bowl.

4Beat the eggs and vanilla and add to the bowl. Beat until just combined.

5Spoon the mixture into the paper cases.

6Bake for 18 to 20 minutes until risen, golden and firm to the touch.

7Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
