Ingredients

  • 2 1/2 c. all-purpose flour, sifted
  • 1/8 tsp. salt
  • 6 Tbsp. margarine
  • 1/2 tsp. baking powder
  • 1/2 c. currants
  • 2 eggs, well beaten or 4 egg whites or egg substitute to equal 2 eggs
  • 1/4 c. skim milk

Directions

    Cream together the flour, salt and margarine. Stir in the baking powder and currants.

    Add eggs and milk. Turn into an oiled 8 x 4-inch pan and bake at 350° for 45 to 60 minutes.
