- 2 1/2 c. all-purpose flour, sifted
- 1/8 tsp. salt
- 6 Tbsp. margarine
- 1/2 tsp. baking powder
- 1/2 c. currants
- 2 eggs, well beaten or 4 egg whites or egg substitute to equal 2 eggs
- 1/4 c. skim milk
Directions

1Cream together the flour, salt and margarine. Stir in the baking powder and currants.

2Add eggs and milk. Turn into an oiled 8 x 4-inch pan and bake at 350° for 45 to 60 minutes.
