Curried Beef Salad

Ingredients
- 3/4 lb. lean deli roast beef, sliced 1/4-inch thick
- 1 large apple, cut into 1/2-inch pieces (1 1/2 c.)
- 2 small peaches, cut into 1/2-inch pieces (1 c.)
- 3/4 c. chopped celery
- 1/4 c. chopped green onions
- 1/3 c. low-fat sour cream
- 1 tsp. curry powder
- Boston or leaf lettuce
Directions

1Cut beef into 1 1/2 x 3/4-inch pieces.

2In large bowl, combine beef, apples, peaches, celery and onions.

3Mix lightly.

4In small bowl, mix mayonnaise, sour cream and curry powder until well blended.

5Add to beef mixture; toss to coat.

6Refrigerate at least 1 hour or until well chilled.

7To serve, arrange lettuce on platter.

8Spoon beef salad on top.
