Curried Chicken Dip

  • 1 Tablespoon Olive Oil
  • 2 whole Boneless Skinless Chicken Breasts, 6-8 Ounces Each
  • 1 Tablespoon Curry Powder, Divided
  • 8 ounces, weight Cream Cheese, Softened
  • 1 clove Garlic, Minced
  • 1 whole Scallion, Thinly Sliced
  • Salt To Taste
  • 2 Tablespoons Heavy Cream, If Needed
  • Crackers, Bread, Or Veggies For Serving

Directions

    Preheat a skillet to medium-high heat with the olive oil.

    Once oil is hot add the chicken, and sprinkle with salt and some of the curry powder.

    Flip the chicken after 5 minutes, and finish cooking through (depending on the thickness of the chicken it should take 5-6 minutes per side; but to be sure, the juices should run clear and it should not be pink inside).

    Remove pan from heat.

    Let chicken cool, then shred with two forks.

    In a bowl, add the shredded chicken, cream cheese, garlic, scallion, and remaining curry powder.

    Stir using a fork to combine.

    Taste, and add heavy cream 1 tablespoon at a time to thin if needed.

    Add salt to your preference.

    Serve as desired.
