- 1 Tablespoon Olive Oil
- 2 whole Boneless Skinless Chicken Breasts, 6-8 Ounces Each
- 1 Tablespoon Curry Powder, Divided
- 8 ounces, weight Cream Cheese, Softened
- 1 clove Garlic, Minced
- 1 whole Scallion, Thinly Sliced
- Salt To Taste
- 2 Tablespoons Heavy Cream, If Needed
- Crackers, Bread, Or Veggies For Serving

1Preheat a skillet to medium-high heat with the olive oil.

2Once oil is hot add the chicken, and sprinkle with salt and some of the curry powder.

3Flip the chicken after 5 minutes, and finish cooking through (depending on the thickness of the chicken it should take 5-6 minutes per side; but to be sure, the juices should run clear and it should not be pink inside).

4Remove pan from heat.

5Let chicken cool, then shred with two forks.

6In a bowl, add the shredded chicken, cream cheese, garlic, scallion, and remaining curry powder.

7Stir using a fork to combine.

8Taste, and add heavy cream 1 tablespoon at a time to thin if needed.

9Add salt to your preference.

10Serve as desired.
