- 3 green onions, chopped
- 1 red pepper, sliced
- 1/2 lb. fresh green beans
- 1 bay leaf
- 2 Tbsp. curry powder
- 2 tsp. cumin
- 1 tsp. salt
- 1 1/4 lb. cooked chicken
- 1/3 c. blanched, slivered almonds
- 3 c. cooked rice
- canola or peanut oil
- 1 c. sliced mushrooms
- 1 can baby corn (rinsed)
- sesame oil
Directions

1Trim green beans and cut into 1-inch lengths on the diagonal. Cut chicken into bite size pieces.

2Using a hot wok, toast almonds in a small amount of vegetable oil.

3Set aside.

4Cook chicken in same oil*, remove.

5Add more oil, cook remaining ingredients, except rice.

6Return chicken and almonds to pot.
