Curried Chicken Pilaf

Ingredients

  • 3 green onions, chopped
  • 1 red pepper, sliced
  • 1/2 lb. fresh green beans
  • 1 bay leaf
  • 2 Tbsp. curry powder
  • 2 tsp. cumin
  • 1 tsp. salt
  • 1 1/4 lb. cooked chicken
  • 1/3 c. blanched, slivered almonds
  • 3 c. cooked rice
  • canola or peanut oil
  • 1 c. sliced mushrooms
  • 1 can baby corn (rinsed)
  • sesame oil

Directions

    Trim green beans and cut into 1-inch lengths on the diagonal. Cut chicken into bite size pieces.

    Using a hot wok, toast almonds in a small amount of vegetable oil.

    Set aside.

    Cook chicken in same oil*, remove.

    Add more oil, cook remaining ingredients, except rice.

    Return chicken and almonds to pot.
