  • 2 cups chicken broth
  • 2 cups corn
  • 1 12 cups chopped onions
  • 1 jalapeno chili, finely chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 12 teaspoon ground cumin
  • 12 teaspoon cinnamon
  • 1 cup milk
  • 1 (14 ounce) can light coconut milk
  • 2 tablespoons cornstarch
  • salt and pepper
  • cilantro (to garnish)

Directions

    Combine chicken broth, corn, onions, jalapeno, garlic and ginger in slow cooker; cover and cook on high for 3-4 hours, stirring in milk during the last 30 minutes.

    Turn heat to high and cook 10 minutes; add combined coconut milk and cornstarch, stirring 2-3 minutes.
