- 1/4 cup long-grain rice
- 1 tsp olive oil
- 1/2 lb cod fillet, cut into cubes
- 1 tbsp curry powder
- 1/2 lb leeks, thinly sliced
- 1 cup chicken stock
- None None fresh herbs, for garnish
Directions

1Cook the rice in boiling salted water for 20 mins. Drain the rice and set aside.

2Meanwhile, heat the oil in a saucepan and saute the fish for 2 mins. Add the curry powder and season with salt. Add the leeks and cook for 2 mins. Pour in the stock and simmer over medium heat for 5 mins. Season. Add the rice and serve garnished with fresh herbs.
