- 2 pkg. (1-1/4 lb. each) frozen baby lima beans
- 1 cup water
- 2 tbsp. unsalted butter
- margarine
- 1 md. onion, chopped
- 1-1/3 tbsp. curry powder
- 1/4 cup non-fat plain yogurt
- 1-1/3 tbsp. fresh lemon juice
- 1/4 tsp. coarse (kosher) salt
- 1/8 tsp. black pepper
Directions

1Bring the lima beans and water to a boil in a medium saucepan over high heat.

2Lower the heat; cover, and cook for 6 minutes.

3Drain and set aside.

4Melt the butter in the same saucepan over medium heat.

5Add the onion and curry powder.

6Cook, stirring occasionally, for 6 to 8 minutes or until the onion is tender.

7Stir in the lima beans until heated through.

8Remove from the heat.

9Stir in the yogurt, lemon juice, salt and pepper until well combined.

10Serve immediately.
