Curried Orange Rice

- 1/4 c. margarine (1/2 stick)
- 1 medium onion, thinly sliced
- 1 c. uncooked rice
- 1 c. chicken broth
- 1 tsp. salt
- 1 c. orange juice
- 2 tsp. orange zest (optional)
- 1/2 c. seedless raisins (either white, dark or mixed)
- 1 bay leaf
Directions

1Melt butter in a heavy saucepan or flameproof casserole; saute onion until soft and golden, but not brown.

2Stir in curry and rice; cook 2 minutes longer, stirring constantly.

3Add remaining ingredients; stir with fork.

4Bring to boiling; lower heat and cover.

5Simmer 15 to 20 minutes or until rice is tender and liquid has been absorbed.

6Remove bay leaf before serving.
