Curried Orange Rice

Ingredients

  • 1/4 c. margarine (1/2 stick)
  • 1 medium onion, thinly sliced
  • 1 c. uncooked rice
  • 1 c. chicken broth
  • 1 tsp. salt
  • 1 c. orange juice
  • 2 tsp. orange zest (optional)
  • 1/2 c. seedless raisins (either white, dark or mixed)
  • 1 bay leaf

Directions

    Melt butter in a heavy saucepan or flameproof casserole; saute onion until soft and golden, but not brown.

    Stir in curry and rice; cook 2 minutes longer, stirring constantly.

    Add remaining ingredients; stir with fork.

    Bring to boiling; lower heat and cover.

    Simmer 15 to 20 minutes or until rice is tender and liquid has been absorbed.

    Remove bay leaf before serving.
