Curried Pineapple Rice

  • 1 small onion, chopped
  • 1 1/2 c. water
  • 1 (10 1/2 oz.) can beef broth, undiluted
  • 1 c. uncooked regular rice
  • 3/4 tsp. curry powder
  • 1/8 tsp. garlic powder
  • 1 (8 oz.) can unsweetened pineapple chunks, drained

Directions

    Combine first 3 ingredients in a medium saucepan; bring to a boil.

    Stir in rice, curry powder and garlic powder.

    Cover, reduce heat and simmer 20 to 25 minutes.

    Add pineapple to rice; cook an additional 5 minutes or until rice is tender and water is absorbed.
