Ingredients

  • 2 c. cooked long grain white, brown or wild rice
  • 2 Tbsp. butter or margarine
  • 1 medium onion, chopped
  • 1/4 c. golden raisins
  • 2 tsp. curry powder
  • 1/2 to 1 tsp. salt or to taste
  • 1/8 to 1/4 tsp. black pepper
  • fresh mint (optional)

Directions

    Cook rice according to directions on package.

    Melt butter in heavy skillet. Add onion and saute for 3 to 4 minutes or until onion is tender but not mushy.

    Add rice, raisins, almonds, curry powder, salt and pepper. Fold to blend well.

    Serve garnished with fresh mint or parsley.
