- 2 c. cooked long grain white, brown or wild rice
- 2 Tbsp. butter or margarine
- 1 medium onion, chopped
- 1/4 c. golden raisins
- 2 tsp. curry powder
- 1/2 to 1 tsp. salt or to taste
- 1/8 to 1/4 tsp. black pepper
- fresh mint (optional)
Directions

1Cook rice according to directions on package.

2Melt butter in heavy skillet. Add onion and saute for 3 to 4 minutes or until onion is tender but not mushy.

3Add rice, raisins, almonds, curry powder, salt and pepper. Fold to blend well.

4Serve garnished with fresh mint or parsley.
