- 2 lg. yams, diced into.25-inch cubes
- 1 tbsp. salt
- 3 tbsp. sunflower oil
- 1/2 tbsp. black mustard seeds
- 1/2 tbsp. cumin
- 15 curry leaves, chopped
Directions

1Preheat the oven to 375F.

2Dice the yams and place in casserole dishes.

3Sprinkle the salt over the yams.

4Place the oil, mustard seeds, cumin and curry leaves in a small skillet or sauce pan.

5Heat for 2 minutes.

6After the spices are infused in the oil, place the oil and spices in the casserole dishes, and stir the yams until the oil and spices are evenly distributed over the yams.

7Bake in the oven for 35 minutes, or until fork tender.
