Ingredients
- 2 lb. stew beef
- 1 medium onion
- 5 large cloves garlic
- 3 Tbsp. curry powder
- 1 tsp. pepper
- salt to taste
- 1/2 c. coconut milk
- 3 c. water
- 2 or 3 medium potatoes, cut up
Directions

1Wash and trim beef; set aside.

2Cut onion and garlic; put oil in pressure cooker; add garlic and let fry until brown.

3Add onion and fry one minute. Add beef and a little salt, fry until light brown.

4Add water.

5Cover cooker and let it pressure for 10 minutes.

6Put cooker under cold tap water.

7When the steam is gone, open cooker.

8Put it back on the stove.

9Add curry, potatoes, pepper, coconut milk and salt to taste.

10Cook until potatoes are tender.

11Serve on rice.
