- 8 chicken thighs, boned and cut in cubes
- 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 6 Tbsp. butter
- 1/2 c. onion, finely chopped
- 1 clove garlic, crushed
- 2 tsp. curry powder
- 1/2 tsp. thyme
- 2 (8 oz.) cans stewed tomatoes
- 3 Tbsp. dried currants
Directions

1Put flour, salt and pepper in a paper bag.

2Shake chicken in bag until coated.

3Heat 4 tablespoons of butter in a large pot. Brown the chicken.

4Add more butter as you need it.

5Remove chicken; add onion, green pepper, garlic, curry powder and thyme. Cook five minutes.

6Add tomatoes with the liquid from the can. Add chicken; cook, covered, 20 to 30 minutes.

7Add currants to the chicken and stir.
