Ingredients
- 1 cup Quinoa
- 1 small Onion
- 1 medium Yellow bell pepper
- 1 can Coconut milk (5.46 fl oz)
- 2 tbsp Curry powder (Spice hunter)
- 1 cup Water
- 1 1/2 tbsp Olive oil
Directions

1Chop onion and pepper into small pieces set aside.

2In medium pot heat oil.

3Saute onion and pepper until transparent add salt remove from heat.

4Rinse the quinoa like you would rice, set aside.

5In a 2 cup glass measuring cup whisk the coconut milk and water till smooth, set aside.

6Place pot back on heat add quinoa and curry powder mix well.

7Once mixed add coconut milk and water mixture, stir together.

8Bring to a boil then reduce heat and simmer for 10 to 12 minutes.

9You can add 1 pound of chicken if you'd like to.

10The amount and type of curry is up to you.

11Start with a little and add as you taste it.
