Curry Crusted Salmon

  • 1 cup bread crumbs
  • 1 tablespoon curry
  • 1 teaspoon cumin
  • 1 tablespoon cilantro chopped
  • 1 tablespoon canola oil
  • 4 salmon fillets

    Reheat oven to 350. Cover a baking sheet in aluminum foil and lightly spray with cooking spray.

    Add bread crumbs, cilantro, curry and cumin to a food process (or a small bowl) and pulse several times. Slowly add the oil while pulsing. Add a bit of water if it is not wet enough.

    Pat the salmon dry with a paper towel. Add the mixture only to the top of the salmon. Then, press the mixture into the meat so it has a crust. Place on the baking sheet and cover with alumninum foil.

    Bake for 10 minutes covered, then 10 minutes uncovered. Enjoy!
