Curry Rice Salad

Ingredients

  • 1 (6 oz.) jar marinated artichoke hearts
  • 1/3 c. Hellmann's mayonnaise
  • 1 Tbsp. lemon juice
  • 1 tsp. curry powder
  • 1 box Rice-A-Roni (chicken flavor)
  • 1/2 c. green pepper, chopped
  • 1 c. celery, chopped
  • 4 green onions, sliced
  • 12 green olives, sliced
  • 1 can water chestnuts, sliced

Directions

    Drain artichokes and save juices.

    Cut artichokes in half; combine with mayonnaise, lemon juice and curry powder.

    Fix Rice-A-Roni as directed on box.

    Cool rice.

    Mix rice and artichoke liquid, then add remaining ingredients.

    Toss; chill and serve on lettuce leaves.
