  • 1- 1/2 pound Cooked Large Shrimp (peeled, Tails Removed And Deveined), Chopped Into 1/2-inch Pieces
  • 1 whole Small Red Onion, Finely Diced
  • 1 stalk Celery, Finely Diced
  • 1/2 cups Finely Chopped Cilantro Plus More For Garnish
  • 1/4 cups Light Mayonnaise Or Miracle Whip
  • 1/4 cups Spicy Ranch Dressing
  • 1 Tablespoon Curry Powder
  • 1/2 whole Lemon, Juice And Zest
  • 1/2 teaspoons Salt (or More To Taste)
  • 1/2 teaspoons Black Pepper, Or More To Taste
  • 4 whole Hot Dog Buns Or Split-top Rolls

Directions

    In a medium bowl combine the cooked shrimp, onion, celery and cilantro.

    Set aside.

    In a small bowl whisk together the mayonnaise, ranch dressing, curry powder and lemon juice and zest.

    Season with salt and pepper to taste.

    Pour dressing over shrimp mixture and toss thoroughly to combine.

    Divide the shrimp salad mixture among the buns, sprinkle each with more cilantro and serve.
