- 2 c. cushaw, cooked and mashed
- 1 c. milk or cream
- 2 whole eggs, separated
- 1 c. sugar
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 (9-inch) pastry shell (unbaked)
Directions

1Combine squash, milk, beaten egg yolks, sugar and seasonings. Fold in stiffly beaten egg whites.

2Pour mixture into unbaked pastry shell.

3Bake at 425° for 10 minutes, then reduce to 350° and bake until center of pie is set, about 45 minutes.

4Serve pie with whipped cream or Cool Whip.
