- 1 (9-inch) unbaked pie shell
- 4 eggs, slightly beaten
- 1/2 c. sugar
- 1/4 tsp. salt
- 1/2 tsp. vanilla
- 1/8 tsp. almond extract
- 2 1/2 c. milk, scalded
- nutmeg
Directions

1Chill pie shell while making filling.

2Blend eggs, sugar, salt, vanilla and almond extract.

3Gradually stir in scalded milk. Pour into pie shell.

4Sprinkle with nutmeg.

5Bake in hot oven (400°) for 25 to 30 minutes, or until knife inserted halfway between outside and center of custard comes out clean.

6Cool on cooling rack 15 to 30 minutes, then chill in refrigerator.
