  • 2 eggs
  • 1/3 c. sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 1/2 c. milk
  • 2 c. cooked rice
  • 1/3 c. raisins (optional)
  • nutmeg (optional)

    Beat eggs.

    Add sugar and mix well.

    Add salt and vanilla. Stir in milk.

    Add rice.

    Pour into 1 1/2-quart casserole, buttered.

    Place casserole in pan of hot water and bake in 350° oven about 50 minutes or until knife inserted comes out clean. May be sprinkled with nutmeg before baking.
