- 1 1/2 c. milk
- 3 egg yolks
- 1/4 c. sugar
- dash of salt
- 1 tsp. grated lemon peel
Directions

1Heat milk in top of double boiler over direct heat until tiny bubbles appear around edge of pan.

2Beat egg yolks, sugar and salt to mix well.

3Very slowly, pour hot milk into egg mixture, beating constantly.

4Return mixture to double boiler top; place over hot, not boiling, water.

5(Water in lower part of double boiler should not touch upper part.)

6Cook, stirring constantly, until this coating forms on metal spoon, approximately 8 to 10 minutes. Immediately pour custard into a bowl; place sheet of waxed paper directly on surface.

7Set bowl in cold water to cool.

8Stir in lemon peel.

9Refrigerate until very cold, several hours or overnight.

10Makes 1 1/2 cups.
