  • 1 c. sugar
  • 2 eggs
  • 2 Tbsp. vinegar
  • 2 Tbsp. cornstarch
  • 1 c. water
  • 1 small lump butter
  • 1/2 tsp. lemon extract
  • 1 baked 9-inch pie shell
  • whipped cream

Directions

    In top of double boiler, combine sugar, eggs, vinegar, cornstarch and water.

    Cook over hot water until mixture is thick and smooth.

    Stir occasionally.

    Just before removing from heat, stir in the butter and lemon extract.

    Pour into baked pie shell. Cool and serve with whipped cream, or may serve plain.
